Luxury Restaurant Operations and Sales Optimization
Analyzing meals data, analysis was done to recommend efficiency gains in staffing through meal demand prediction, along with menu changes and operational efficiency gains.
Demand Analysis
Using the demand data from each meal, our team constructed a holistic view of the demand for each meal and each item on the menu during the days of the week. Using this insight to inform staffing for the nights, and menu changes.
As well, our team found that certain meal timing and days of the week were lacking in beverage sales and created pairing and recommendations for beverages during those timing to boost overall revenue.
Finally, using the demand prediction, we were able to provide resource re-allocation.
Our team also sat at the restaurant to record timing of food service, noticing complaints of food being served taking too long, averaging over 20 minutes from order to service.
Challenges:
The primary challenge for this project was collecting data using very old systems. Our team had to collect paper chits and convert them into usable tabluar data.
A few years after our initial project, our team was tasked to help find and implement a new POS system that satisfied the need. We were able to coordinate with different vendors and build out requirements which ultimately led to successful new modern POS implementation.
